About raw garden vegetable salad recipe
This raw garden vegetable salad is easy to make using locally grown summer vegetables. Even better is to use vegetables from your own backyard garden. Use lots of fresh herbs for the extra flavor and nutritional punch they deliver. And feel free to make any substitutions to take advantage of what is available.
This is a fully raw recipe and is also gluten-free and grain-free. Raw garden vegetable salad can be made fat-free by simply deleting the olive oil. This salad can be part of every healthy whole food diet.
Ingredients for raw garden vegetable salad
1 medium cucumber 2 small Roma or other tomatoes
1/2 small red onion 2-3 red radishes
2-3 tablespoons fresh mint 2-3 tablespoons fresh basil
Juice of 1 lemon(zest optional) 2 tablespoons extra virgin olive oil, preferably unfiltered
sea salt and freshly ground black pepper to taste
Preparing raw garden vegetable salad

Cut the mint and basil leaves into very thin strips. Add the lemon juice and olive oil, a little salt and pepper, and toss well. Adjust the salt and pepper if necessary. Enjoy.
Notes on raw garden vegetable salad
Any number of different veggies can be used in this salad. Zucchini and yellow squash are good, daikon radish, celery or whatever is readily available. Oregano, thyme, parsley and cilantro are all suitable herbs for raw garden vegetable salad. Try lime juice, orange juice or rice vinegar instead of lemon juice.
