1 medium cucumber                                                                          2 small Roma or other tomatoes

1/2 small red onion                                                                            2-3 red radishes

2-3 tablespoons fresh mint                                                               2-3 tablespoons fresh basil

Juice of 1 lemon(zest optional)                                                         2 tablespoons extra virgin olive oil, preferably unfiltered
