About hummus stuffed mushrooms
This recipe for hummus stuffed mushrooms takes just minutes to prepare and is absolutely delicious. I like to use brown button mushrooms but many other mushroom varieties will work just as well. You can use your favorite homemade hummus for the filling or whatever hummus looks best at the store. A little cheese on top adds flavor and a little more protein but skipping the cheese makes this recipe vegan. This is also a gluten-free recipe.
Ingredients for hummus stuffed mushrooms
Enough button, shiitake, large portabella or other stuffable mushrooms for the number of people to be served
Enough of your favorite hummus to amply fill all of the mushrooms
Olive oil to coat all sides of the mushrooms
Shredded cheese of your choice to top the hummus, if desired
Preparing stuffed mushrooms with hummus
1. Wash the mushrooms thoroughly under cold running water
2. Carefully remove the stems without breaking the mushroom body
3. Oil the mushrooms very lightly inside and out
4. Fill the mushroom bodies with hummus about 1/4-inch above full
5. Top with a small amount of shredded cheese, if desired
6. Place the filled mushroom on a lightly oiled baking sheet
7. Put the mushrooms into a preheated 400-degree oven for 15 minutes. Check the mushrooms and bake longer if needed.
8. Let the mushrooms rest 5-10 minutes before serving.
Notes on this recipe
This is an extremely easy and fast recipe to prepare for a side dish, appetizer or party snack. Medium-sized button mushrooms, 1 1/2-2-inches across, will take approximately 1 tablespoon of hummus per mushroom. The hummus will puff up slightly during baking, becoming lighter textured and making the stuffed mushrooms look larger. A little shredded cheese on top of the hummus will lightly brown and add some contrasting color to the tops of the mushrooms. Hummus stuffed mushrooms are at home in any healthy whole food diet.
