I highly recommend the Chef’s Choice EdgeSelect 120 Diamond Hone Sharpener-Plus for everyone that ever needs to use a knife. Sharp knives make preparing healthy and delicious meals easy and stress-free. Dull knives are dangerous because they require more force to cut and also lead to frustration and wasted time and energy.

This knife sharpener is designed to be as easy to use as a rock and delivers a perfect factory edge in seconds. I have been using the 120 model for more than two years now both at home and in a restaurant kitchen. There have been no problems with the sharpener and it still works as well as when it first came out of the box. It removes the minimum amount of steel necessary and there have been no issues with either blade wear or shape during this time.

Each of the three diamond honing wheels in the sharpener have spring supports to ensure the blade stays at the perfect angle while sharpening. The first slot shapes the blade with the coarsest grinding wheel, preparing it for a cutting edge. The second slot uses a finer diamond grit and a slightly greater angle, applying the actual cutting edge to the blade. The third slot is the finest and polishes off any grooves and removes all “tags”, leaving a perfectly straight razor-like edge.

I used tri-stone sharpeners, consisting of three different grits of sharpening stone, along with honing oil to sharpen all of my knives for many years. I was happy with the results but so much steel was removed from the knife that the blade needed to be reshaped with a grinder annually. The knives also required sharpening every other day to maintain a good cutting edge.

This Chef’s Choice diamond sharpener gives a much more durable edge, needing touch-ups only twice each week even with heavy use. Even after two full years, none of my knives have needed reshaping. I also save at least two hours every week just on sharpening time. This makes the $150 investment well worth it to me for home use and even more so at the restaurant. Added to that is everyone being able to sharpen a knife whenever needed instead of having to ask me to sharpen it on the stone(a skill some people never get very good at).

Using one of these sharpeners will make all of your knives much safer to use as well as reducing preparation times and frustration in the kitchen. Easier, quicker prep makes eating a healthy whole food diet enjoyable instead of being a chore. And if you should happen to cut yourself in the kitchen, a very sharp blade hurts less, bleeds less and heals much more quickly.
