Saffron grouper cheeks and shrimp is a very quick and easy to prepare whole food meal that will please the eye and the palette. Grouper cheeks and shrimp are relatively cheap and this sets off the relative expense of the saffron(I paid $3.99 for 0.014 oz./0.4 gr.). This recipe takes about 10 minutes from start to finish and is gluten-free.

Note: Halibut cheeks are also becoming more easily available. They are also a great deal for a great product.

Preparing the recipe

Start out by ensuring that no hard bone remains on the grouper cheeks by simply feeling them on all sides. Remove any bone or hard cartilage pieces that you find. Peel the shrimp. Split the shrimp along the mid-line and take out the vein. This recipe is for two people and uses 3/4 pound of grouper cheeks and six large shrimp.

Place 2 tablespoons grass fed butter into a thick-bottomed skillet(I prefer cast iron). Melt the butter over low heat until it just starts to bubble but not brown. Add the grouper cheeks to the pan, turn up the heat very slightly and turn/stir often until about half done. Add the split shrimp to the pan and turn/stir until nearly done. Add 0.014 ounces of saffron and turn/stir in well. Add sea salt and freshly grated black pepper to taste and remove from the heat. Nothing should be browned – this recipe uses low heat for very gentle cooking of the seafood.

The fish should have produced some liquid during cooking which combined with the butter will make a thin sauce. The saffron should have provided a nice yellow color and silky/sweet/earthy/floral flavor. Let rest in the pan for a few minutes before serving to let the flavors continue to meld together and develop.

This seafood recipe should be right at home in any healthy whole food diet. For maximum iodine and other nutrients, please buy wild shrimp.
Particularly try to stay away from shrimp farmed in Southeast Asia as the farming techniques and feeds used there can be much less than ideal.
