This recipe turns fresh okra into finger-food for a healthy whole food diet. Get all of the nutrition of okra, peanuts, walnuts, onion, fresh turmeric root, brown rice and raw goats’ milk cheese working for you at the same time. Stuffed fried okra is very simple and fast to prepare and cook.

Start by washing the number of fresh okra pods needed. I usually prepare 8-10 per person depending on the rest of the meal.

Next, cut off the stem and remove a strip along the top of the okra pod.

Remove the seeds with the point of a paring knife. Leave a section near the stem intact to hold in the stuffing.

I made this recipe for 40 okra pods. Place the stuffing ingredients into the bowl of a food processor: 1/4 cup each peanuts and walnuts, 1/8 cup cooked brown rice, 1/8 cup finely shredded hard cheese, 2 teaspoons peeled fresh turmeric root, 1 tablespoon lemon zest, 1/2 teaspoon each sea salt and black pepper and 1/8 cup fresh whole basil leaves.

Pulse the processor and scrape down the sides of the bowl between pulses until the stuffing resembles a coarse meal.

Stuff the okra pods and replace the strip that was cut off. I like to do these one at a time so that all of the “lids” fit correctly.

Pre-heat a mixture of olive and coconut oils 1/8″-1/4″ deep in a thick skillet. Add the stuffed okra pods without crowding and cover the skillet. Set the heat to low and check after 10 minutes. Cook until the okra is soft.

Remove okra from the pan to paper towels to soak up excess oil. Cook the next batch. They are ready to eat.
